Batch 3 has been finished in an ex-ale cask of some sort. No details as to what it was though unfortunately.

The nose very different from Batch 2, gone are are the super sweet refined sugar notes and instead you are presented with a much richer and better balanced nose. There are still some sweet notes but they are of dark chocolate orange with a touch of black forest gateau in the background followed up with some nutmeg to add a little spice.
The palate is much richer again than the Batch 2 being surprisingly similar to the nose, the dark chocolate makes an appearance, just without the orange this time and is followed by black forest gateau and nutmeg. It is a dry palate but not too dry. There is some spiciness to it but much reduced when compared to Batch 2.
The finish is of medium length and dry with some spice and dark chocolate.
It was great doing a side-by-side comparison of Batch 2 and 3 as it highlights just how much the cask in which they are matured in makes a difference. They are both only 2 years old so have not even had much time in the casks but very different drams. Both very nice, can’t wait to try something from them with a bit of age.
